Pumpkin Seed Adobo Crusted Salmon

We have a tasty recipe for you today from the sea! This salmon recipe is a bit different than others as we crusted it with pumpkin seeds and adobo seasoning. This recipe for adobo seasoning is full of flavor and complimented with a side dish of salad and rice. We have a fun video to go along with the recipe so check it out below.

Pumpkin Seed Adobo Salmon
2, (4-6oz) salmon fillets
½ tbsp mayonnaise
1 tsp honey
¼ tsp La Selva Beach Spice Adobo Seasoning
3 tbsp pumpkin seeds, finely chopped
1 lemon, cut into wedges
Preheat oven to 400F. Line a baking tray with foil. Transfer salmon to the lined baking tray.
In a small bowl, combine mayonnaise and honey.
In a separate small bowl combine pumpkin seeds and La Selva Beach Spice Adobo Seasoning.
Using a spoon or pastry brush, spread the mayonnaise and honey mixture over each fillet.
Top with the Adobo seasoning and pumpkin seed mixture, pressing the crust into the fillet.
Bake for 7-10 minutes, depending on the thickness of the salmon fillet.Serve with a wedge of lemon.
Depending on the size and shape of your salmon, you may require more or less pumpkin seeds. Cooking time will vary based on the thickness of your salmon. This recipe is easily doubled.
